Noodles

Watching them make lamian in Beijing reminds me of going to Noble Roman’s as a child and watching them make pizza through the window. I always aspired to be able to toss a pizza crust like that. They never made a mistake. They were true artisans.

Now that I’m an adult, I’m content to leave the noodle- and pizza-making to the experts. I’ll snap some photos and then enjoy my bowl of 10 kuai noodles without actually exerting myself.
